HOLIBLANCA EVOO (Spain)

Medium Intensity - This is a perfect example of a herbaceous Hojiblanca olive oil. Its aroma is a fantastic blend of flowers and herbs, unripe peach, green almond, nectarine, fresh cut grass, and aromatic tarragon. Combined with notes of green banana, apple ,and star anise, this oil is very balanced and well-rounded, with a healthy bitterness with hints of green tea, wild fennel, and fresh lettuce greens which round out the complexity of its flavour profile. The finish is a classic warming black peppercorn that lingers beautifully. Harmonious and cohesive between aroma, this oil is perfect for use in and for finishing fresh spring risotto or pasta. Due to the fruity aroma, this Hojiblanca is also delightful in citrus olive oil cakes, dark chocolate mousse, chocolate ganache, truffles, or chocolate bark. Bold enough to be used in marinades and sauces, this is best served with pork or chicken and used in fruity and herb-based sauces; sauté pineapple or apple and serve over ham, or sauté cherries or plums and serve over chicken. - Crush Date: October 2024
