Sweet Butter Olive Oil Banoffee Bread


1 3/4 cups of all-purpose flour
2 tsp. baking powder
1/4 tsp baking soda
1/2 tsp salt
2 eggs
1/3 cup granulated sugar
1/3 cup brown sugar
1/3 cup Sweet Butter olive oil
1 cup mashed, ripe banana (2 large)
1 banana diced into bite sized chunks
1/2 cup toffee bits

Preheat oven to 350 degrees, and grease a 9x5 loaf pan

In a small bowl, sift together the flour, baking powder, baking soda, and salt

In a large mixing bowl, whisk together the eggs and sugar until light and frothy

Add sweet butter olive oil to large mixing bowl and blend in

Mash the banana, then alternately add into the large mixing bowl in stages along with the flour mixture

Fold in the diced banana and toffee bits

Transfer batter to loaf pan, then bake for approximately 45 minutes to an hour

Transfer to a wire rack to cool - remove bread from pan after about 10 minutes to continue to cool
