Persian Lime Olive Oil Aioli

2 fresh garlic cloves, minced
1 tsp. sea salt
1 large egg yolk
1 Tbsp lime juice (fresh squeezed)
1/2 cup neutral oil such as safflower or grape seed oil
1/2 cup Persian Lime Olive Oil
 
Place the garlic and salt in in a blender, or food processor. Blend for a few seconds, and add the egg yolk and lime juice. With the motor running, slowly add the neutral oil in a thin stream. Without turning off the motor, add the Persian Lime olive oil, again slowly in a thin stream. Taste mixture and if necessary, add some additional salt.
 
Makes approximately 1 cup.
