Goat Cheese with an Apricot White Balsamic Reduction

Extremely easy and delicious!
2 cups Apricot white balsamic vinegar
8 oz. fresh goat cheese
Over very low heat, gently simmer the balsamic and reduce it by half. The vinegar should never be allowed to boil or the natural sugar will burn and become bitter. Watch very carefully. The process can take as long as 30 minutes but will be worth it in the end. Allow to cool completely and transfer to a jar. Reduction can be kept on the counter or in the refrigerator. Also use the glaze on pork, chicken, fruit or paired with additional cheeses.
