Extra Virgin Olive Oil Peanut Butter

2 cups of roasted, unsalted peanuts
1/2 tsp. salt (your choice!)
1 tbs. granulated sugar (again, your choice)
1/4 cup of our high-polyphenol extra virgin olive oils
Add the 2 cups of peanuts into your blender. If using, add the salt and sugar. Pour the extra virgin olive oil over the peanuts and wait until the oil reaches the bottom of the jar. Turn on the blender, increasing speed to high. Blend until your preferred creaminess. You may need to turn off the blender a few times to scrape down the sides. Store peanut butter, tightly covered in the refrigerator for up to 6 weeks.
Makes about 1.5 cups
