Basil Olive Oil and Ricotta Spread

Delicious as a mayonnaise replacement, to dip vegetables, or spread on freshly grilled salmon.

1 1/2 cup partially skimmed ricotta cheese
1/2 cup EVOO, such as an Arbequina
5" sprig of fresh basil, washed well and dried
1 clove of fresh garlic, smashed
1 tbsp of fresh squeezed lemon juice 
1 tsp sea salt or to taste

Place the ingredients inside your food processor or blender and process until creamy and smooth.  Adjust seasoning and store in a tightly covered jar, in the refrigerator for up to 3 days
