Apple White Balsamic Mustard

Ingredients
1/4 cup + another 2 tablespoons of mustard powder
1/2 cup + another 3 tablespoons of yellow or brown mustard seeds
1.5 teaspoons of kosher salt
1/2 cup Green Apple White Balsamic vinegar
1/2 cup of hard apple cider ("flattened" by stirring liquid or pouring it back and forth between 2 cups several times)
1 Granny Smith apple, peeled, cored and finely grated
Directions
oak the mustard seeds and powder overnight in a medium bowl, along with the white balsamic vinegar and hard apple cider. The following morning, add the mixture to a food processor, along with the salt, and process for 1 - 2 minutes until the seeds are coarsely ground. Add the finely grated granny smith apple and pulse a few times to mix. Cover and refrigerate for a few days (to soften the taste) before using, as the fresh mixture will be very pungent.
Recipe makes close to 2 cups of mustard.
